hi there - could you please try and give me a recipe that you think is the most quintessential and traditional form of braai? Also, in your opinion, what is the most traditional South African meat and how do you braai it? (i.e. with what spices etc.). best, Gosia
Real, or traditional braai means that it is done by making a real fire with real wood. Do not use endangered species though. Using scarce wood species would still make it a real braai, but it would make you a stupid person. Once the wood has formed coals, you braai your meat on the coals. My personal view is that one cannot nail it down to once recipe. Very South African is boerewors. If you cannot get hold of boerewors, then go for lamb tjops, they are also in the same legendary status. Visit the recipe section of this website for various authentic braai recipes.
