Hi Jan, Hopelik kan jy ons help. Ons het ons eerste boerewors gemaak.Die geur is lekker, maar oh wee, dis sommer baie droog, of melerig/peoerig. Ons het topside beesvleis gebruik, en varkvet (fyn wat ons nog van die lieslap afgekrap het). Die vleis/vet verhouding was 1:4. Ons het beide grof gemaal; een verstelling onder die heel grootste op 'n elektriese stopper. Het jy dalk 'n idee wat het skeef geloop?? Verkeerde vet? Te min vet? (PS: Ons is in New Zealand en skaapstertvet is nie vryelik bekombaar hier nie).; Ons waardeer jou raad 1000!

I spoke to Hermann Schultz, one of the boerewors experts at Freddy Hirsch about this problem and what follows is what he said: "Jan, dit klink vir my die vet is die grootste problem, Liesvet het 'n baie lae smelt temperatuur, dit verander na olie met hitte and loop uit die boerewors as jy dit gaarmaak. Gebruik eerder harde rug, bout of nek spek, of nog beter gebruik die “pork belly” vir so 50% van jou vleis. Vir die bees gebruik goeie voorkwart “trimmings” in die plek van die “topside”. Maak seker dat die finale grote van die gemaalde vleis nie kleiner as 6mm is nie. Groete en voorspoed met die Boerewors."
Jan, I'm putting together a magazine article for a readership of mainly lower-income South Africans about 24 September Heritage Day and Braai4Heritage will be the main topic. We work three months in advance, so I'm doing the piece in the next few days (today is 07 July and deadline for Sep is close). Is there anything I can specifically you want mentioned to lower-income classes? Also, we publish nationwide. Do you have any info on big orchestrated braais taking place on Sep 24, 2010 all around the country? Or shall I just focus on everybody braaing in small groups in their own capacity? Elvorne, thanks for the help in getting the message to 50 million people. What needs to be conveyed is this: 24 September is South Africa's annual day of celebration. When we all bury the hatchet and have a party. The central theme of this party is to gather around a fire with your friends and family, to prepare your food on the fire, and to feast. South Africans have one common heritage, and that is to braai. Although 3rd parties are welcome to organise big braais, the main idea is that you simply braai at home or in a park with friend & family, and that all 50 million South Africans will sit around the same fire figuratively. Unofficially, South Africa's official population sits at 46,000,000. Of those at least 95% braai actively. Putting an exact figure on how often each individual braais is anyones guess, but you could safely say its more than once a month on average.

A public park where you can braai in Johannesburg is at Zoo Lake. For team-building you can also go there, or anywhere else, except Ellispark Stadium. Do not go to Ellispark for teambuilding. The Lions rugby team goes there for team-building, and they have a really bad team.
Have you tried the type of hooks have been used for generations in South Africa for cooking and eating and called a "gaffel" - which means "grab it? We make them in 4 sizes and in left-handed too.
I remember them from my childhood. (Yes, I know, all ex girlfriends will argue I am still a child). I am left-handed so thanks for making it like that as well. My problem is, the hook pricks a hole in the meat. And then some of the juices will run out. I am sure you have some argument to counter this, can you please tell me what that is?
I assume that you will take frozen meat with you in a little car fridge, thus space will be an issue. You want to go for deboned meat like sirloin, rump, boerewors, sosaties, pork-neck, lamb steaks, chicken breasts etc. Stay away from cuts like Tbone, ribs, loin chops. No sense in wasting fridge space on all the bones when it can be better sued to make a bit of ice for the Gin & Tonic. Also, not good to leave bones at the campsites at night or when you go, as this attracts Hyena.
All the cuts mentioned above braais easy and quickly. Use salt, pepper and possibly a braai spice. Lastly, remember to properly kill your fire before you move on.

Real, or traditional braai means that it is done by making a real fire with real wood. Do not use endangered species though. Using scarce wood species would still make it a real braai, but it would make you a stupid person. Once the wood has formed coals, you braai your meat on the coals. My personal view is that one cannot nail it down to once recipe. Very South African is boerewors. If you cannot get hold of boerewors, then go for lamb tjops, they are also in the same legendary status. Visit the recipe section of this website for various authentic braai recipes.

Hello, I would like more information on Heritage Day and Braai. I live in the United States and of Italian American descent but I am bothered by a new holiday celebration called Kwanzaa. This was made up by an African American man who has a bad criminal past but has managed to make Kwanza something big and I think just for the money. I saw Heritage Day and Braai4Heritage and wondered if this was something that people of African descent in all nations would come together for. Is there another African holiday that is more celebrated as a bigger holiday or does Heritage day kind of bring it all together to celebrate African Heritage. Thanks for your time Mark

National Heritage Day is a public holiday in the country South Africa. South Africa is situated on the southern tip of the continent Africa. The day falls on 24 September each year. South Africans celebrate their various and diverse cultures on this day each year. However, all South Africans have one thing in common. Our love of cooking meat on a fire. We generally refer to this as "braai". I started Braai4Heritage, a non profit organisation, a few years ago with the aim of encouraging South Africans to specifically take the time to braai on National Heritage Day. The public uptake of this was enormous and many people now refer to 24 September as National Braai Day. We have absolutely nothing to do with Kwanzaa and are completely unrelated to it. Kwanzaa is not a South African celebration, nor does it originate from here. The prawns left with the Sweetie-Man. Regarding tinfoil, its perfectly acceptable to use tinfoil as an aide when doing gourmet braaing. It is most often used to cover certain parts of the meat/fish and prevent it from burning whilst the inside is cooking. You can also wrap onions or potatoes in foil and chuck it into the coals. This can then be served as a side dish.
